Basque Chicken

INGREDIENTS

  • 1 3-pound whole chicken, cut into 8 pieces
  • Salt and ground black pepper
  • 1 tablespoon olive oil
  • 1 chorizo sausage, cut into thin slices
  • 1 large onion, diced
  • 1 green bell pepper, cored, seeded and diced
  • 3 garlic cloves, minced
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (14.5-ounce) can chicken broth
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon smoked paprika
  • 1 (13.5-ounce) can chopped spinach, drained

PREPARATION

Sprinkle chicken with salt and pepper. In 12-inch skillet over medium-high heat, cook chicken pieces until well browned on all sides. With slotted spoon, remove chicken to plate. In drippings remaining in skillet over medium heat, cook chorizo, onion, green pepper and garlic until softened.

Add chicken broth, scraping bottom of pan to loosen brown bits. Add diced tomatoes, red wine vinegar, paprika and chicken pieces. Over high heat, heat to boiling. Reduce heat to low; cover and simmer 30 minutes or until chicken is tender. Stir in chopped spinach. Heat through.
