Shrimp Salad Remoulade

Eating salad doesn’t have to be boring! With a well-stocked “Cantry,” you can create delicious, inspired salads throughout the week, like this Shrimp Salad Remoulade featuring canned shrimp. It’ll take your mealtime to the next level of deliciousness.

INGREDIENTS

  • 1/3 cup whole grain mustard
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped scallions
  • 2 tablespoons finely chopped dill pickle
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon prepared horseradish
  • 1 tablespoon red or white wine vinegar
  • 3 (6-ounce) cans deveined medium shrimp, rinsed and drained
  • Salt to taste
  • Lettuce leaves

PREPARATION

In large bowl combine mustard, celery, scallions, dill pickle, parsley, olive oil, horseradish and vinegar until well mixed. Toss with shrimp. Add salt to taste.

To serve, line platter with lettuce leaves; top with shrimp salad.
