Cherries with Almonds, Mint & Ricotta

Cherries with Almonds, Mint & Ricotta

INGREDIENTS

2 15-ounce cans pitted sweet cherries, drained
3 tablespoons honey
2 teaspoons red wine vinegar
¼ teaspoon salt
1/8 teaspoon ground black pepper
1 15-ounce container ricotta cheese
½ cup whole almonds, toasted
¼ cup fresh mint leaves

 

PREPARATION

In medium bowl combine cherries, honey, red wine vinegar, salt and pepper to mix well.


To serve, spoon ricotta into four serving bowls; top with cherry mixture. Garnish with almonds and mint.
