Golden Rice Pilaf

Fruits – like the apricots used in this recipe – are canned at the peak of ripeness, sealing in their freshness, flavor and nutrition, naturally. So when you open up a can, you’re unlocking all that goodness.

Golden Rice Pilaf


1 tablespoon vegetable oil
1 small onion, finely chopped
1 cup long-grain basmati rice
1 (13.75-ounce) can low sodium vegetable or chicken broth
1/2 cup golden raisins
1 teaspoon salt
1 (15-ounce) can apricots, drained and coarsely chopped
1/2 cup slivered almonds, toasted


In 3-quart saucepan over medium heat, in hot oil, cook onion until tender-crisp, stirring occasionally. With slotted spoon, remove to bowl. Add rice; continue cooking until rice is lightly toasted, about 1 minute. Add canned broth, raisins and salt; over high heat, heat to boiling. Reduce heat to low; cover and simmer 15 minutes.

Stir in apricots and almonds; cook 2 minutes longer.
