Jeff McInnis’ Green Rice

Thanks to the canned foods in your Cantry, this homemade dessert is as easy as uno, dos, TRES! With dessert essentials like canned sweetened condensed milk, canned evaporated milk and canned cherries, your taste buds will be singing a sweet tune in no time.

Jeff McInnis’ Green Rice


1¼ cups long-grain rice
2 cups water
1 5-ounce can evaporated milk
2 large eggs
2/3 cup vegetable oil
1 14-ounce can spinach
1 large onion, finely chopped
2 14-ounce cans cream of mushroom soup
2 14-ounce cans mushroom pieces
1½ cup Sharp Cheddar, grated
Kosher salt and ground pepper
1 tablespoon butter for greasing the casserole dish


Cook rice in water over medium heat until al dente and remove from pot. Strain rice over sink in colander and remove excess water.

Preheat oven to 350°F.

In food processor, puree the milk, eggs, oil and spinach. Place all ingredients in a large mixing bowl. Stir in onion, cream of mushroom soup, mushroom pieces and Cheddar cheese. Season with salt and pepper to taste. Place in 3-quart casserole dish that has been greased with a tablespoon of butter. Bake 1 hour until lightly crisp and browned on top.
