Baby Back Ribs with Peach-Jalapeno Sauce

INGREDIENTS

  • 2 medium racks baby back ribs
  • Salt and pepper
  • 1 tablespoon brown sugar
  • 1 tablespoon chili powder
  • 1 (15-ounce) can sliced peaches, drained
  • 1 (7.75-ounce) can sliced jalapeños, drained
  • 1/2 cup barbecue sauce

PREPARATION

Preheat oven to 350°F. Remove thin membrane on underside of each rack of ribs. Sprinkle ribs with salt and pepper. Combine brown sugar and chili powder; rub ribs with mixture. Place ribs on large baking sheet; cover with foil. Bake 1 ½ hours or until ribs are tender.

Meanwhile, in blender or food processor, blend peaches, jalapeños and barbecue sauce until smooth.

Preheat grill to medium. Brush ribs on both sides with peach sauce. Grill ribs 5 to 10 minutes until sauce is slightly caramelized.
