Beet and White Bean Hummus

This bright dip is a total show-stopper and full of fiber & flavor. With a well-stocked pantry full of canned ingredients, snacks like this delicious hummus are simple to make for your family and friends any day of the week.

INGREDIENTS

  • 1 15-ounce can beets, drained
  • 1 15-ounce can cannellini beans, drained and rinsed
  • 1 clove garlic
  • 2 tablespoons freshly squeezed lemon juice
  • Kosher salt
  • 1 tablespoon fresh dill, finely chopped for serving
  • Extra virgin olive oil, for serving
  • Vegetables, such as radish, endive, cucumbers, for serving
  • Pita chips, for serving

PREPARATION

In a food processor, combine beets, beans, garlic and lemon juice. Pulse until very smooth. Season to taste with salt. Transfer to a bowl and top with dill and drizzle with olive oil. Serve with vegetables and pita chips. Hummus can be refrigerated for up to one week.
