Caribbean Wok Beans & Veggie

INGREDIENTS

  • 1 (15-oz) can low-sodium black beans
  • 1 (14.5-oz) can diced tomatoes
  • 1 (15-oz) can cut sweet potatoes in light syrup
  • 1 Tbsp avocado oil or grapeseed oil
  • 2 large green bell peppers, large diced
  • 2 tsp freshly grated ginger root
  • 2 large garlic cloves, very thinly sliced
  • 3 scallions, thinly sliced, green and white parts separated
  • ½ cup canned organic coconut milk
  • ½ tsp sea salt, or to taste
  • Pinch of cayenne pepper, cinnamon, and/or allspice
  • ¼ cup salted roasted peanuts, coarsely chopped
  • ¼ cup fresh cilantro leaves

PREPARATION

Drain canned beans and canned tomatoes, combining and reserving the canned liquids for later use; set all aside. Drain canned sweet potatoes; set aside.

In a wok or extra-large skillet, heat oil on high. Add the bell peppers and stir-fry until lightly caramelized, about 3 minutes. Add ginger, garlic and white part of the scallions and stir-fry until fragrant, about 30 seconds. Add beans, tomatoes, coconut milk, ¼ cup of the reserved bean-tomato liquid, salt and mixture of cayenne, cinnamon and allspice. Cook while stirring until sauce is slightly thickened, about 3 minutes. Add sweet potatoes and cook while gently stirring until sweet potatoes are heated through and sauce is thickened, about 2 minutes more.

Remove from heat and stir in the green part of the scallions. Adjust seasoning.

Transfer to a large serving bowl or individual bowls, sprinkle with the peanuts and cilantro, and serve.
