So, no matter the season, you can choose whichever canned fruit your heart desires to make this delicious dessert.

INGREDIENTS

  • 2 13.5 oz full fat coconut milk, refrigerated overnight
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 15 oz canned fruit (whichever canned fruit you desire!), drained and rinsed
  • 1/4 cup unsweetened coconut flakes

PREPARATION

Open your refrigerated cans of full fat coconut milk, scoop the solid white part into a medium bowl and discard the excess liquid.

Add maple syrup and vanilla extract to the bowl and use a hand or standing mixer to whip the coconut milk. Mix on high until smooth and fluffy.

Open your cans of fruit, drain them, rinse the fruit, and then pat the fruit dry with a paper towel. Try to get it as dry as you can.

Add the fruit to the bowl, along with coconut flakes. Use a spatula to gently fold the fruit and coconut into the whipped coconut.

Once mixed, transfer to the refrigerator for 30 minutes before serving.
