Deconstructed Mexican Street Corn

This delicious Deconstructed Mexican Street Corn is ready in less than 15 minutes thanks to the canned corn in your Cantry. Harvested and canned at its peak ripeness, the can seals in the corns’ nutrition, freshness and flavor, naturally!

INGREDIENTS

  • 1 14.5-ounce can diced green chilies, drained
  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • 1 tablespoon fresh-squeezed lime juice
  • ½ teaspoon chili powder
  • 1 small garlic clove, minced
  • 2 15-ounce cans whole kernel corn, well drained
  • ½ cup finely crumbled cotija cheese or feta cheese
  • 2 tablespoons chopped fresh cilantro

PREPARATION

In medium bowl, combine green chilies, sour cream, mayonnaise, lime juice, chili powder and garlic to mix well.

In large skillet over medium-high heat, cook corn until just charred, 3 to 5 minutes, stirring frequently. Stir in sour cream mixture to mix well; heat through.

To serve, spoon corn mixture into serving bowl. Sprinkle with cheese and cilantro. Serve as a side dish.

If desired, serve with tortilla chips for dipping.
