Green Bean Casserole Cups

INGREDIENTS

  • 3-4 slices bacon
  • 1/2 cup diced yellow onion
  • 2 (16 oz) cans Libby’s Naturals Cut Green Beans, drained
  • 1 (10 3/4 oz) can Campbell’s Cream of Mushroom Soup
  • 1/2 teaspoon salt, more or less to taste
  • 3/4 teaspoon black pepper
  • 3/4 teaspoon garlic powder
  • 1/2 cup shredded cheddar cheese
  • 1 (16.3 oz) can refrigerated biscuits
  • 1 (2.8 oz) container french-fried onion rings

PREPARATION

Cook bacon over medium heat in a large non-stick skillet.

Remove and crumble bacon, leaving bacon grease in skillet.

Cook onions in bacon grease until tender, about 5 minutes.

Stir in drained green beans, mushroom soup, salt, pepper, garlic powder, and cheese.

Taste and re-season, if necessary.

Pre-heat oven to 375 degrees F and grease a standard 12 slot muffin tin with cooking spray.

Halve each biscuit and press each half into the greased muffin tin. Be sure to press it into the bottom of each slot and up the sides.

Fill evenly with green beans.

Bake in preheated oven for 15-20 minutes, or until biscuits are cooked and golden brown.

Remove from muffin tin and repeat with remaining 4 biscuit halves.

Top casserole cups with onion rings and enjoy!
