Huevos Rancheros

Canned foods means less prep and year-round availability, making flavorful homemade meals a reality, more often. And thanks to canned diced tomatoes, refried beans and sliced black olives, these Huevos Rancheros are a satisfying and easy way to start your morning.

INGREDIENTS

  • 1 (16-ounce) can diced tomatoes
  • 1 small onion, coarsely chopped
  • 1 small garlic clove
  • 1 (4-ounce) can chopped green chilies, drained**
  • 1 (16-ounce) can refried beans
  • 1 tablespoon butter*
  • 4 large eggs
  • 4 corn tortillas
  • 1 (3.8-ounce) can sliced black olives, drained
  • 1 ripe avocado, peeled, seeded and chopped
  • Chopped cilantro for garnish*

PREPARATION

In blender or food processor, blend tomatoes with their liquid, onion and garlic until mixture is blended and slightly chunky. Stir in green chilies. In small saucepan or microwave, heat refried beans until heated through and warmed.

In 12-inch nonstick skillet over medium heat, melt butter; break eggs into the skillet. Cook until whites have set and yolks are still runny and loose.

In another skillet over medium heat, cook tortillas until lightly browned, about 1 minute on each side.

To assemble Huevos Rancheros: Spread tortillas with refried beans; top each tortilla with a sunny-side up egg and salsa. Garnish with olives, avocado and chopped cilantro.
