Italian Bean Soup

Bring home the taste of fall with a bowl of Italian Bean Soup. Thanks to the canned ingredients, you’ll get a nutritious and flavor meal on your table in under an hour!

INGREDIENTS

  • ½ cup white onion, diced
  • 3 stalks celery, diced
  • 1 can of carrots, diced
  • 1 tbsp garlic, diced
  • 1 ham steak, cubed
  • 1 can cannellini beans
  • 1 can crushed tomatoes
  • 3 cans chicken broth
  • ½ can spinach
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • Salt and pepper to taste

PREPARATION

Add a dash of oil to a soup pot, and simmer onions, celery, and carrots on medium heat. Once onions are clear, add in garlic and cook for another minute.

Add ham steak and brown slightly.

Drain and rinse beans, add to pot. Add tomatoes and broth to pot, simmer for about 20 minutes

Add spinach and herbs to pot, simmer for 15 more minutes. Serve immediately.
