Lima Bean Gratin

Lima beans are picked and canned when they’re in season, sealing in their nutrition, freshness and flavor, naturally!

INGREDIENTS

  • 3 14.5-ounce cans seasoned lima beans, drained – reserve ½ cup of the liquid
  • 1 cup mayonnaise
  • ½ cup canned evaporated milk
  • ½ cup shredded Parmesan cheese
  • 1 cup seasoned breadcrumbs
  • 1 4-ounce can mushroom pieces and stems, drained

PREPARATION

Preheat oven to 400°F.

Lightly grease a 2½-quart baking dish. Transfer the drained lima beans into the dish. Drizzle ½ cup of the reserved liquid over the lima beans.

In a small bowl, whisk the mayonnaise and evaporated milk until thoroughly blended. Add Parmesan cheese and spoon mixture over the lima beans.

Cover with breadcrumbs and bake for 30 minutes. Let rest for 20 minutes before serving. Any excess liquid will be reabsorbed as the gratin cools.
