Peach Granita

This sweet treat calls for canned sliced peaches. Like home canning, the can seal in peaches’ natural goodness and nutrition at the peak of ripeness. Your taste buds will thank you!

INGREDIENTS

  • 1 cup granulated sugar
  • 1 cup water
  • 1 29-ounce can sliced peaches, drained
  • 1 tablespoon lemon juice
  • 2 teaspoons grated lemon peel
  • Mint sprigs for garnish, optional

PREPARATION

In small saucepan over high heat, heat sugar and water to boiling. Boil 3 minutes or until sugar is melted and mixture had thickened slightly.

In blender or food processor blend peaches. Stir in sugar mixture and lemon peel. Place in 8-by 8-inch baking pan. Freeze mixture at least 6 hours, stirring every 2 hours to break up ice crystals.

To serve, scrape or scoop mixture into serving bowls. Garnish with mint if desired.
