Peaches & Cream Baked Oatmeal

Ingredients

3 cups old fashioned oats

1 can sliced peaches, save some for topping

1.5 cups milk (I use almond milk)

2 eggs

1 ripe banana, mashed

1/2 cup brown sugar (I use coconut sugar)

1/4 cup butter or coconut oil, melted and cooled

1/2 tbsp cinnamon

1.5 tsp baking powder

1 tsp vanilla extract

1/4 tsp salt

Walnut pieces, save some for topping

Preparation

In a large bowl, add oats, sugar, cinnamon, baking powder, salt, and stir together

In a medium bowl, lightly beat eggs

Add milk, banana, butter, vanilla extract, and mix well

Pour wet ingredients into large bowl and combine everything

Gently mix in half canned peaches and walnut pieces

Pour mixture into greased 11×7 or 9×9 pan

Top with remaining peaches and walnut pieces

Bake at 350º F for 30-35 minutes

Serve with warm milk and any additional toppings like cinnamon, coconut flakes, etc
