Potato Salad

Canned foods – like potatoes – cut your prep in half, making healthy homemade meals a reality more often.

INGREDIENTS

  • 1 29-ounce can whole potatoes, well drained
  • 2 celery stalks, sliced
  • 2 scallions, chopped
  • 1 small red bell pepper, cored, seeded and diced
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh chopped parsley
  • 3 tablespoons extra-virgin olive oil

PREPARATION

Meanwhile, cut potatoes into ½-inch chunks; place in large bowl.
Add celery, scallions and red bell pepper.

In small bowl combine lemon juice, mustard and parsley. Gradually whisk in olive oil. Toss dressing with potato mixture to mix well.
