Pumpkin Goat Cheese Crostini

INGREDIENTS

  • 1 (10.5 oz) log goat cheese, softened to room temperature
  • 1 (15 oz) can Libby’s Pumpkin Puree
  • 2 tablespoons honey, plus extra for drizzling
  • 2 tablespoons brown sugar
  • 1/4 teaspoon salt, plus more to taste
  • 1/4 teaspoon pepper
  • 1-2 (12 oz) baguette, sliced into 1/2-inch thick slices
  • 1 (14 oz) can Ocean Spray Cranberry Sauce Whole Berry
  • Chopped salted pistachios
  • Crumbled feta

PREPARATION

Place goat cheese, pumpkin puree, honey, brown sugar, salt, and pepper into a large bowl.

Using a hand (or stand) mixer, beat together until smooth.

Taste and re-season, if necessary. Set aside.

Place sliced baguette onto a silicone mat lined rimmed baking sheet in a single layer.

Broil until toasted, flip, then broil until the second side is toasted.

Top each toasted baguette slice with a generous scoop of the goat cheese mixture.

Top with a scoop of cranberries, then sprinkle with pistachios and feta.

Taste and drizzle with more honey or sprinkle with more salt, if necessary.
