Rainbow Fruit Parfait

Start your day off right with this nutrient-packed parfait, featuring peaches and cherries that were harvested and canned at the peak of ripeness, providing access to these delicious, seasonal fruits throughout the school year!

INGREDIENTS

  • 3 cups granola
  • 4 cups vanilla Greek yogurt
  • 1 cup strawberries, hulled and diced
  • 1 15-oz can sliced peaches, drained and diced
  • 1 cup kiwi, peeled and diced
  • 1 cup blackberries, quartered
  • 1 15-oz can cherries, drained
  • Handful of fresh mint

PREPARATION

In a clear glass (recommend 12-oz glass), place granola to cover the bottom. Top with yogurt and spread to cover all of granola, then top with diced strawberries. Repeat with layers of yogurt, peaches, yogurt, kiwi, yogurt, blackberries, more yogurt, sprinkle with granola and top with cherries. Garnish with mint.
