Sauerkraut, Vegetable, and Kielbasa Fried Rice

Skip the take out in favor of homemade fried rice featuring canned sauerkraut and mixed vegetables. Fun fact: when canned produce is incorporated into diets people tend to eat more fruits and vegetables

INGREDIENTS

  • 2 tablespoons butter
  • 1 small onion, finely diced
  • 2 cloves garlic, finely minced
  • 1/2 lb kielbasa sausage, sliced into 1 -inch discs
  • 1 cup canned sauerkraut, roughly chopped
  • 4 cups cooked rice (preferably a day old)
  • 1 8.25 oz canned mixed vegetables (carrots, corn, peas, lima beans), drained
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped chives
  • Salt and pepper to taste.
  • Optional: 4 fried eggs

PREPARATION

Melt butter in a large skillet over medium-high heat and sauté onions until translucent (3 minutes). Add garlic, kielbasa sausage and sauerkraut. Cook for 5 minutes until fat from sausage renders and sauerkraut is crispy around the edges, then add rice and canned mixed vegetables.

Stir gently to combine and break up rice, cooking for another 5 minutes to combine flavors and toast the rice. Add parsley, chives and season to taste then remove from heat and serve with a fried egg on top.
