Smoky and Spicy Tomato Soup

Canned produce is just as nutritious as fresh and frozen, and in some cases even better! The canned tomatoes in this heart-warming soup contain more of the healthful antioxidant, lycopene, than fresh!

INGREDIENTS

  • 4 strips bacon, cut into 1-inch pieces
  • 1 large onion, diced
  • 3 cloves garlic
  • 1 4-ounce can diced green chiles, drained
  • 1 28-ounce can tomatoes
  • 2 teaspoons salt
  • ¼ cup red wine vinegar
  • ¼ cup olive oil

PREPARATION

Cook bacon in a large saucepot over medium heat, roughly 5 minutes. Add diced onion and garlic, cook 5 minutes. Add green chiles and tomatoes. Reduce heat to low and simmer for 20 minutes. Adjust consistency with water, if desired. After 20 minutes, finish with salt, vinegar and olive oil. Blend soup* until just smooth.

*Use hand blender or regular blender. If regular blender, make sure soup mixture is cool before blending.
