2 cans (29 oz.) Muir Glen Diced Tomatoes with Italian Herbs
1 box 16 oz. spaghetti
grated parmesan cheese, for serving
chopped parsley, for serving
PREPARATION
In a large sauté pan, heat olive oil over medium heat. Add garlic, onions, bell peppers, and salt. Stir frequently for 10-15 minutes until onions are soft and bell peppers are starting to brown at the edges. Add tomato paste and coat vegetables. Once the paste starts to caramelize and turns darker red, stir in broth. Add diced tomatoes and simmer on low heat for about 10 minutes. Meanwhile, cook pasta according to directions on package. Serve with parmesan cheese and parsley. Enjoy!
