Super Green Spring Salad

INGREDIENTS

  • 1 cup whole wheat couscous
  • 1 15-ounce can chickpeas, drained and rinsed
  • 1 15-ounce can sweet peas, drained
  • 1 14.5-ounce can French style green beans, drained
  • 1 14.5-ounce can cut asparagus spears, drained
  • 1/2 cup parsley, finely chopped
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

PREPARATION

Cook couscous according to package directions. Drain.

In a large bowl, add all ingredients. Season to taste with salt and pepper.
