Taco Tater Tot Casserole

Ingredients

1-lb. ground beef
1 small onion, diced
1 (1-oz.) pkg. taco seasoning (or 2 tablespoons homemade taco seasoning)
1 (15.25-oz.) can sweet corn, drained
1 (15-oz.) can black beans, drained and rinsed
1 (7-oz.) can diced green chilies
1 (8-oz.) bag shredded Mexican cheese, divided
1 (19-oz.) can enchilada sauce
1 (32-oz.) pkg. frozen tater tots
favorite taco toppings like diced tomatoes, chopped green onions, sliced black olives, sliced jalapeno peppers, sour cream, etc.

Preparation

Preheat oven to 375 degrees. Spray a 9×13″ baking dish with cooking spray and set aside.

In a large skillet, cook the ground beef until starting to brown, about 2 minutes. Add the onion, and continue to cook until the ground beef is fully browned and the onions are translucent, about 3-5 minutes.

Drain well and stir in the taco seasoning, corn, black beans, and green chilies.

Pour the enchilada sauce into the ground beef mixture. Reserve 1/2 cup of the shredded Mexican cheese for topping, and dump the rest of the bag into the skillet, as well.

Mix together and transfer the contents of the skillet to the prepared baking dish. Arrange the tater tots on top of the ground beef mixture.

Bake uncovered at 375 degrees for 40 minutes. Sprinkle the reserved cheese over top of the tater tots, and bake for an additional 5 minutes or until melted and bubbly.
