INGREDIENTS

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 4 ounces diced pancetta or bacon
  • 1 small onion, diced
  • 1 stalk celery, diced
  • 1 large garlic clove, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14.5-ounce) can chicken broth
  • 1/2 cup milk
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 (14.5-ounce) can diced carrots, drained
  • Salt and ground black pepper to taste
  • 1 (16-ounce) package fettuccine noodles
  • Chopped parsley for garnish

PREPARATION

In 12-inch skillet over medium-high heat, in hot oil, cook ground turkey and pancetta until browned on all sides, stirring to break up turkey into small pieces. Reduce heat to medium; add onion, celery and garlic; cook until softened, about 5 minutes.

Add crushed tomatoes, chicken broth, milk, tomato paste and bay leaf. Over high heat, heat to boiling. Reduce heat to low; simmer, uncovered 30 minutes, stirring occasionally. Add diced carrots; cook 5 minutes longer to blend flavors.

About 10 minutes before serving, cook fettuccine as label directs. Drain. Toss with Bolognese sauce. Sprinkle with chopped parsley.
